Cowboy Hash...Using Up Zucchini!

Cowboy Hash


I have had this recipe for years now and it is a staple in our home. 
You can whip it up in less than an hour and best of all it calls for zucchini!
Something I have plenty of in my garden.
I think I have shredded and frozen 50 million quarts of it:)!!
I am always grateful for a recipe that includes this delicious vegetable.


This is so easy to make and an absolute crowd pleaser. 
My kids love it and we usually serve it with crusty french bread or rolls, and a fresh garden salad. 
You can either make it in a pot on the stove or transfer it and bake it in the oven. 
It also freezes really well!
Here is the recipe...




1 lb. ground beef
1/2c. chopped onion
1 {1 1/4 oz.} pkg. taco seasoning
1 1/2c. water
1 1/2c. thinly sliced zucchini
1c. frozen corn
1 {14.5oz} can stewed tomatoes
1 1/2c. uncooked instant rice
1c. shredded cheddar cheese


In a large pot, brown beef and onion. Drain. Stir in remaining ingredients, except rice and cheese. Bring to a boil. Stir in rice. Reduce heat to low, cover and simmer for 8 minutes, or until liquid is absorbed. Remove from heat. Fluff. Add cheese to top, cover and let stand 3 minutes. 




* I like to fluff, then transfer everything into a baking dish, top with cheese, and then bake {uncovered} for about 7 minutes at 350 degrees. You can also just wrap and freeze at this point. Either way, it tastes great.

Oh my goodness Julia! This is practically an answer to my prayers! I have so much zucchini that I should have opened up my own booth at the farmers market this year! HA! I've frozen so much of it too but I'm so happy to have another recipe to use it up with! Thank you so much for sharing this, it sounds like something my family would love!
